Professional meat processing for small farms
North Okanagan Butcher Hub is a licensed cut-and-wrap facility located in Spallumcheen. It exists to solve a real problem facing regional farms: the lack of accessible, professional meat processing capacity. By focusing on cutting, wrapping, freezing, and food safety excellence, the Hub allows small farms to bring high-quality meat to market without relying on distant or overbooked processors.
How it works
The Hub operates in coordination with mobile slaughter units that travel directly to farms. Animals are humanely slaughtered on-farm using licensed mobile trailers, and the carcasses are then transported to the Spallumcheen facility for professional processing. This model reduces animal stress, improves meat quality, and keeps processing capacity local.
At the Hub, carcasses are expertly cut, wrapped, labeled, and frozen in a clean, modern facility designed specifically for small-scale producers.
The people behind it
North Okanagan Butcher Hub is operated by Matt Kemp, in partnership with the Small-Scale Meat Producers Association (SSMPA).
Matt’s connection to Fresh Valley Farms runs deep. He originally trained while working at Fresh Valley Farms, where we supported his professional development, including formal schooling at Thompson Rivers University. In 2024, Matt returned to TRU again and earned certification at the highest level currently recognized for butchery in British Columbia through SkilledTradesBC.
His commitment to skill, precision, and food system resilience is unmistakable. Today, Matt runs an independent operation that serves farms across the region while maintaining the values we care deeply about: respect for animals, technical excellence, and accountability to farmers and eaters alike.
The SSMPA, led by Executive Director Julia Smith, plays a key role in supporting the Hub as part of a broader effort to strengthen small-scale meat processing capacity in BC.

Our relationship
Now that Matt has opened his own location, Fresh Valley Farms no longer processes red meat on-farm. All beef, pork, and lamb are now professionally cut and wrapped through North Okanagan Butcher Hub. This partnership allows us to focus on animal care and land stewardship, while trusting that our meat is handled with the highest level of skill and food safety.
