Meet the baker: Markus Jaeger

Inspired Breads is owned and led by Markus Jaeger, a master baker whose path to baking began unexpectedly and decisively.

While studying computer science and economics, Markus worked in a small bakery to support himself. His job was simple. He packed bread. But through a small window, he watched the bakers at work. He saw flour turn into dough, dough turn into bread. He smelled loaves fresh from the oven, touched the heat of the crust, and listened as baguettes “sang” while cooling, their crusts cracking softly in the open air.

That moment changed everything.

Markus left university to begin a formal baking apprenticeship, a decision that shocked his family and friends but remains one he has never once regretted. Baking showed him the beauty of food creation, patience, and craft. It became a calling.

Training and experience

Markus trained and worked in Germany before continuing his career in Canada.

He completed his apprenticeship at Bakery Bormuth in the Darmstadt area, then worked at Bakery & Patisserie Zorn near Mannheim. After moving to Canada, he spent over a decade as a journeyman baker at The Artisan Bake Shoppe Ltd. in Vancouver.

In 2019, Markus founded Inspired Breads in Salmon Arm, BC, where he now serves as President and Master Baker.

A return to the roots of baking

Over years of working in both small and large operations, Markus developed a clear philosophy. He wanted to go back in time.

Inspired Breads focuses on traditional baking methods that respect the dough. There are no dough improvers. No artificial colours or flavours. No rushing fermentation to meet production schedules. Dough is given time to proof fully so natural flavours can develop. Loaves are shaped by hand, not by machines.

Inspired Breads has become a favourite at farmers’ markets across the North Okanagan and Shuswap. Customers regularly describe it as their first stop at the market, even if that means standing in line.

People come for crusty loaves, soft French rolls, pretzels, cinnamon buns, doughnuts, and traditional German treats. Families love the breads for everyday meals. Couples have even chosen Inspired Breads pretzels as wedding favours, including custom heart-shaped pretzels made for special days.
